Our Path in the Wachau
We pursue our own path in winemaking by combining organic viticulture with precise manual work and gentle vinification. By focusing on healthy soils and sustainable cultivation, we create our distinctive signature.
Driven by the belief that true quality only comes with responsibility, we rely on gentle grape pressing, natural fermentations, and extended aging on the fine lees — creating wines with character, depth, and a clear message for today and future generations.
Sustainability and Organic Wine Production
We place great importance on treating our soils with the utmost respect to create a sustainable foundation for future generations. Because good wine begins in the soil. In our vineyards, we work with organic farming methods that are in harmony with nature.
Our Ouessant and Krainer Steinschaf sheep contribute to a natural cycle and actively promote biodiversity. We consciously avoid artificial fertilizers and synthetic pesticides to protect the health of the soil and the environment in the long term.
Georg's goal: Authentic Wachau wines
For me, the conscious interplay of nature, vines, and people is at the center. My aim is to produce wines that reflect their origin while meeting the demands of our time.
Climate change presents new challenges for viticulture. To maintain the balance between tannin structure, acidity, and fruitiness, I rely on precise selection of harvest timing and gentle cellar work. This ensures that our wines will retain their distinctive quality and character in the future as well.
